Ammoora: A Modern Taste of Syria in Baltimore

A Modern Expression of Syrian Tradition.

There are restaurants that introduce you to a cuisine, and then there are restaurants that invite you into a culture. At Baltimore’s Ammoora, the experience is designed to feel like the latter. Located inside The Ritz-Carlton Residences at the Inner Harbor, Ammoora brings the flavors, hospitality, and visual character of Syria to the table through a contemporary Levantine dining experience.

At the heart of Ammoora is Chef Dima Al-Chaar, whose cooking draws from Syrian family recipes and her own culinary journey. With nearly two decades of experience across culinary arts and restaurant management, Al-Chaar approaches traditional dishes with a modern perspective while keeping the ingredients and flavors that connect them to their roots. Her menu is particularly vegetable-forward, giving familiar Levantine ingredients room to become the focus rather than simply an accompaniment.

That philosophy becomes clear once the food reaches the table. Ammoora encourages a style of dining built around sharing, with mezze and larger plates designed for the middle of the table. The menu moves comfortably between recognizable classics and more imaginative interpretations. Fattoush and tabouleh sit alongside dishes such as Mousakhan Chicken Rolls, Beyti Sujuk Rolls, Knafeh Shrimp, and Kebbet Karaz, where lamb, walnut burghul, sour cherry, mint, and cinnamon come together in a distinctly Syrian combination.

The vegetable-focused side of the menu is just as intentional. Harissa-roasted cauliflower arrives over labneh with pistachio chimichurri, pickled onion, pomegranate, nigella seeds, and tahini, while Fasolia Batenjan pairs pomegranate-glazed eggplant with halloumi, shishito peppers, tomatoes, and white beans. These dishes show how Ammoora uses familiar ingredients to create something that feels both rooted and contemporary.

But food is only part of the story. Ammoora’s setting is designed to reinforce the connection to Damascus, with multiple dining spaces offering different expressions of the same atmosphere. The Damascene serves as the grand dining room, while The Parlor offers a more intimate setting and The Courtyard brings dining outdoors. The restaurant describes the experience as a modern reflection of Syria, where cuisine, hospitality, and design are meant to work together.

Even dessert continues that journey. Levantine sweets such as Madlouka, Ashta Bil Asal, Laymouniyé, and an assortment of pistachio-filled baklawa bring flavors of orange blossom, rose, honey, semolina, and pistachio to the end of the meal.

What makes Ammoora compelling is its ability to make heritage feel alive rather than preserved behind glass. In Baltimore, Syrian cuisine is given room to evolve without losing the character that makes it meaningful. The result is a restaurant where a meal can become more than dinner: it becomes an invitation to explore the flavors, stories, and hospitality of a culture through the language of the modern table.
