Von’s 1000Spirits: Where Seattle History Meets Sourdough and Spirits

A Modern Take on American Dining & Spirits

In downtown Seattle, where restaurants come and go with the rhythm of the city, Von’s 1000Spirits has built something harder to replicate: a sense of history. Located at 1225 1st Avenue, just steps from Pike Place Market, the restaurant carries a hospitality legacy that stretches across five generations, while giving that legacy a distinctly modern expression through scratch cooking, cocktails, and a bar lined with more than 1,500 spirits.

Von’s story begins long before its current home. The family’s Seattle restaurant history includes Jake O’Shaughnessy’s Saloon & Eatery and FX McRory’s Whiskey Bar, two establishments remembered for their ambitious spirits collections and larger-than-life personalities. In 1987, Tim Firnstahl opened Von’s Grand City Cafe on Pine Street, where generously poured martinis and Manhattans became part of the restaurant’s identity. The Wagering Wheel, a playful fixture that invited guests to take a chance on their drinks, helped give the original Von’s its unmistakable character.

When Von’s 1000Spirits opened on First Avenue in 2012, the concept was reimagined rather than simply revived. The restaurant brought the familiar spirit of the original into a new setting, adding an alchemy-inspired bar, scratch sourdough cooking, and a bourbon-forward cocktail program. The result is a place where the past remains visible without becoming a museum piece. The Wagering Wheel still has its place, the martinis remain central to the experience, and the bar continues to be a defining part of the room.

The food gives Von’s another way to tell its story. At the center is a 75-year-old sourdough starter used across the kitchen, including its handmade pasta and pizzas. That foundation appears in dishes ranging from sourdough pasta with spicy Bolognese to Tellicherry chicken and smoked Gouda, while the pizza program moves between combinations such as wild mushrooms with black garlic ricotta and a more indulgent four-meat version.

There is something fitting about sourdough becoming such an important part of a restaurant built around spirits. Both depend on patience, character, and a little unpredictability. At Von’s, that relationship extends to the bar, where cocktails are treated with the same sense of craft and personality. The restaurant’s own small-batch bourbon, gin, and vodka add another layer to a drinks program rooted in the family’s long fascination with spirits.

What makes Von’s 1000Spirits compelling is not simply its size, its history, or its extensive bar. It is the way those pieces work together. A five-generation family story becomes a contemporary downtown restaurant. A decades-old sourdough starter becomes pizza and pasta. A legendary spirits tradition becomes a cocktail program designed for today’s Seattle diners.

In a city known for constantly evolving food culture, Von’s offers a different kind of momentum. It keeps moving forward without abandoning where it came from. The restaurant’s newer locations in Woodinville and Kirkland suggest that the story is still expanding, but Seattle remains its foundation.

For diners, that makes Von’s more than a downtown stop for dinner or drinks. It is a place where Seattle history, family hospitality, sourdough, and spirits meet at the same table.
